Colour: transparent. Nose: juniper, citrus and floral tasting, highlighted by the freshness and softness of rose and cucumber. Palate: Intense fruit, citrus and cubeba flavors. dry character of angelica and lily roots. Coriander and cumin bring a more side spicy. Fresh floral, herbal and marzipan notes.
We charge our two stills with grain neutral spirit and add some water from the local Penwhapple Reservoir. A recipe of 11 botanicals is put into the stills in one still it’s added to the spirit / water mix and in the other still it’s put in a basket above between the rectifying column and the condenser and the liquids gently heated. The ‘middle cut’ distillate from the stills is collected and blended together . Water is then added to bring the distillate down to bottling strength before the all important cucumber and rose petal essences are added.
