The origin of Añejos de Altura SA (formally Licorera Zacapaneca SA), the company which produces Ron Zacapa, dates from 1940 when three independent distillers from the city of Zacapa, Guatemala banded together and formed a company in a response to newly introduced government legislation which allocated the quantity each rum producer could bottle. During the 1950s they invested in new technology and in 1963 absorbed a fourth distiller.

Zacapa Ambar is, like its elder brother Zacapa 23, a rum made from the distillation of cane honey. This blend of 4 to 12 year old rums has been aged according to the solera method, a technique from Andalusia which consists of putting young rums together with older rums in the same barrels. For added complexity, the casks used are white oak of various origins (notably old sherry or Pedro Ximenez casks). Another atypical aspect of the ageing process is that it took place at an altitude of 2,300 metres, in the Guatemalan highlands.
