After harvesting the grapes at the optimum point of maturity, they are sanitised and gently pressed. Inoculation of selected yeasts to obtain the base wine. The second fermentation occurs in stainless steel autoclaves at 20°C. Reaching the desired sugar level, fermentation is interrupted by cooling the must at -3°C. The wine is kept at low temperatures for 2-3 weeks for tartaric stabilization. Filtration and bottling.
