With a garnet color of medium concentration, Merlot 2012 has a classic aroma of red fruits, forest aromas and very delicate leather notes. The barrel is perfectly integrated, giving aromatic complexity in an elegant profile, but with some rusticity. On the palate, it is firm and intense, with a good balance between tannins and acidity. Long aftertaste, quite mineral, with freshness and persistence. The long aging in the bottle has allowed the wine to now show itself polished, very harmonious and perfect for traditional food dishes.

Suggested side dishes: Game dishes, mushrooms, veal stews and old-fashioned duck rice. Vegetarian suggestions: Shiitake and/or Porccini mushrooms.

Despite Bairrada being considered the perfect terroir for the Baga variety, there is a small plot of Merlot in Quinta de Baixo, measuring just over 1 hectare, planted around 20 years ago and which is a challenge for Dirk Niepoort, as he passionate about old wines from Bordeaux, where this variety originates. With this vineyard, the intention is to produce a Merlot with character, which expresses the fantastic potential of the clay-limestone soils, characteristic of this region. The 2012, the first edition, was vinified in used French oak barrels, with minimal intervention, following the first steps of Biodynamics.
