This is a white sparkling wine made from Portuguese white grape varieties, essentially: Bical and Maria Gomes. With an open citrine color, it shows a fine and persistent bubble. It is a serious sparkling wine, with aromatic notes very similar to Champagne's "cousin". On the nose it is fresh and complex with hints of citrus, apricot and apple. When shaken in the glass, it soon reveals its more serious side with nuances of hazelnut, yogurt, brioche, and some spices. In the mouth it is fresh, with a very present acidity and a long and spicy finish. It is a top Bairradino sparkling wine, or as winemaker Sérgio Silva would say an "exceptional Blancs des Blancs".
It goes very well with dishes with fat (Piglet, Roasted kid in a wood oven, Codfish).
Bairrada is a region of excellence for the production of sparkling wines. The limestone terroir and the natural acidity of the Bical grape varieties, Cercial and Maria Gomes are exceptional attributes that allow the production of high quality sparkling wines.
