La Volée Blanc de Blancs is a multi-plot sparkling wine that is born in clayey-limestone soil vineyards in the Sangalhos area. Vineyards over 20 years old in the northern part of the region. The grape varieties are the typical white ones, Cercial, Bical and Arinto. Cercial and Arinto in rich clay-limestone soils and Bical in sandy loam soils. The wine is vinified in stainless steel aging, part of the lot 5 to 6 months in old French oak barrels of 500L (with more than 10 years). After the cold winter, the wine aged in an underground cellar sur lies 12 months after the end of the second fermentation, with periodical pugnetage and remuage carried out in the classic pupitres to gain the structure that a great sparkling wine deserves. All the sparkling wine was degummed in an artisanal way, thus giving rise to the name of the wine "à la Volée". Only 6250 bottles were made.
