Lighter in color than the previous year but with the same vibrant, expressive and austere tone. The limestone notes are very evident, surrounded by aromas of lemon, spices and white flowers. The austere and mineral profile of the Bical variety is more evident than the expressiveness of the Maria Gomes variety. In the mouth, it impresses with its lightness, although it is full-bodied and with a lot of grit. The acidity elevates the wine to a unique, fresh, complex, very fine and elegant level. It is vertical, direct and with an austere and deeply mineral aftertaste. A very distinctive white wine that should be drunk in burgundy glasses.
It goes well with seafood dishes, oven-roasted fish and cod dishes. It is also an excellent accompaniment to Japanese-inspired dishes, with alkaline and iodized flavors (such as Nori seaweed).
Quinta de Baixo Vinhas Velhas comes from the combination of the Maria Gomes and Bical grape varieties from centennial vines with a perfect limestone terroir. Given the high natural acidity, these vines originate wines with a pH below 3.0, making it possible to carry out the malolactic fermentation that takes place in Fuders of 1000 liters over 60 years old, coming from Mosel. The VV translates in a surprising way, the incredible lightness and complexity of Bairrada.
