The color is light, citrine and bright. On the nose it is discreet, with floral, citrus and aromatic herb notes that give it complexity and sophistication. This is a serious and distinguished white. What impresses most about this VV when new is the mouth, structured but elegant, with excellent acidity combined with salinity that makes us travel quickly to the limestone soils of Bairrada. It finishes long, persistent and spicy.
It goes very well with seafood dishes, oven-roasted fish, cod dishes and Japanese-inspired dishes, with alkaline and iodized flavors (such as Nori seaweed).
VV Vinhas Velhas is a wine produced only with grapes from the Quinta de Baixo vineyards, where we practice organic viticulture, with SATIVA certification. The VV comes from centuries-old vines, such as Maria Gomes and Bical, planted in a terroir mostly made of limestone. Given the high natural acidity, these vineyards provided wines with a pH below 3.0, making it possible to carry out malolactic fermentation, which occurs in 1000 liter Funders over 60 years old, from Mosel. The VV represents the incredible lightness and complexity of Bairrada.
