Delicate aroma reminiscent of citrus fruits and acacia flower, leaving a velvety wine in the mouth with great elegance and finesse. Great harmony between the alcohol content and the natural acidity of the wine. Very long, fresh and elegant finish.

HARMONIZATION

Pairs very well with delicate fish and poultry dishes white. Ideal to accompany soft sheep's cheese.

With a terroir where clay-calary and schist soils predominate, the wine was produced with grapes from the main white varieties of Alentejo, Roupeiro (60%) and Arinto (40%). The harvest is carried out overnight to protect and preserve all the flavors and aromas of the grapes and started in the 1st week of September. The Arinto grapes were macerated together with the skins for 6 hours at a temperature of 5º C and then gently pressed. The must obtained is statically decanted by cold. followed by a 7-day aging “SURLIES”, About 20% of the musts of Roupeiro and Arinto were fermented in 225 L French oak barrels followed by a 5 month aging with “BATONNAGE” for a better integration of the wood and for a better greater complexity of aromas and flavors. The rest of the must is fermented in stainless steel tanks at a controlled temperature. The final blend of the wine was made in January, followed by bottling.
