GASTRONOMY
It goes well with more elaborate oven-baked fish, stews, or simpler white meats.
It was in 2010 that we started our first White essay by indigenous people. Today, 11 years later, all wines are produced from indigenous yeasts. But which indigenous people? The ones in the cellar? The ones from the vineyard? Here we test only the yeasts from the Morgado de Oliveira vineyard. We therefore made a "foot of vat" in the vineyard by multiplying only the yeasts of the vineyard and directly inoculated the barrels with these yeasts. The result? Our Arinto from the indigenous people of Morgado.
